OUR COOKING

All our dishes are home-made and the menu depends on the season and the arrival. We shop directly in the market of Rungis. Here is a presentation of our specialties, possibly available either on a la carte or on the menu and our different menu offers..

Our specialties

Starters

Pear with Roquefort

Uncooked ripe pear stuffed with Roquefort butter and coated with a whipped Roquefort cream.

Tatin pie with fresh foie gras

Tatin pie with fresh apples, turned upside down on a gingerbread canapé served with a fried escalope of foie gras.

Two salmon saupiquet

Tartar of fresh salmon with dill and wrapped in smoked salmon slice.

Poached eggs with snails

Fresh tomatoes, chanterelles and snails crushed together and sweated in a cream reduction coating four poached eggs on a canapé.

Main dishes

Duck or goose steaklet

Duck or goose thick piece of steak cooked to your taste, coated with a honey sauce, served with two different vegetables (French beans or courgettes and fried fresh potatoes).

Thick beef steak with cepe sauce

Thick piece of beef steak fried to your taste, coated with a cepe sauce, served with two different vegetables (French beans or courgettes and fried fresh potatoes).

Desserts

Hot chocolate profiteroles

Home-made pastry balls stuffed with quite good vanilla ice-cream and coated with hot black chocolate.

Crème brulee, vanilla or pistachio

Home-made cream with caramelized sugar on top and flavoured either with vanilla or pistachio.
